Ingredients Baked Potato Salad

  1. 4 pounds of potatoes, russet.
  2. Olive oil, 1 to 2 teaspoons.
  3. apple cider vinegar, 3 teaspoons.
  4. Mayonnaise, one cup.
  5. 3/4 cup Greek yogurt or sour cream.
  6. 1 kosher salt tsp.
  7. freshly ground black pepper, 1 teaspoon.
  8. 12 ounces cooked, cooled, and diced bacon.
  9. sliced green onions, six.
  10. 1 1/2 cups of shredded medium cheddar cheese.


Methods Baked Potato Salad

  • Set the oven to 400° F.
  • Place washed potatoes on a baking sheet, and use a fork to prick them four or five times. Apply a thin layer of olive oil, season with kosher salt, and bake for 50–60 minutes, or until a cake tester or spear can be easily inserted. Take out of the oven, then allow it cool for five minutes. Peel the potatoes when they are cold enough to handle, then chop them into 1-inch pieces while tossing the potato jackets. It’s alright if the potato flesh crumbles and becomes shaggy; simply move it all to a sizable mixing dish. Sprinkle apple cider vinegar over the potatoes while they are still warm, then let them sit for 15 to 30 minutes or until they have cooled.
  • The bacon should be cooked in a big pan or the oven, drained, and allowed to cool. Make bite-sized crumbles.
  • Mayonnaise and sour cream should be combined in a small bowl. Use kosher salt and pepper to season.
  • Pour the mayonnaise mixture over the cooled potatoes along with the crumbled bacon, green onions, and cheddar cheese. Fold the ingredients together gently. To taste, add additional salt and pepper to the seasoning. Before serving, place in the refrigerator for three to eight hours. For up to 4 days, keep in the fridge.
